Lately I have been obsessed with egg white scrambles! I’m talking having them for breakfast (or with a side of a dark chocolate chip freezer waffle) almost everyday obsessed. They are light, protein packed, super simple and a great way to start your day! I was so excited about my new discovery and wanted to share recipes with everyone, but then I realized not everyone would be able to try them…
So then I began thinking of a similar meal that was vegan friendly and that everyone could try. After quite a few hours of stalking health foodie accounts on Instagram, I discovered tofu scrambles! Unlike 90% of amateur chefs who are slightly intimidated by tofu and scared to cook with it, I actually love it! So when I found out about tofu scrambles, I was stoked! What scares most people about tofu is you really need to season it well. Without any seasoning, it tastes like a bland blob. Gross. However, with proper and adequate seasoning, it tastes incredible and you begin to realize that going vegan may not be so hard! But, let’s be real here. I love Ben & Jerry’s Tonight Dough too much to go vegan.
Anyway, when I first tried to make a tofu scramble, I just used what I had on hand and made up my own recipe because all of the ones I found online called for crazy ingredients and spices which I had never even heard of, let alone have in my pantry. But then after trying my concoction, I actually loved it and have been going off my own recipe ever since! Most of the ingredients can be swapped or left out of the recipe, but I would not recommend leaving out any of the spices or ‘base ingredients’ used to season the tofu unless you want to eat a bland blob.
Lean, Green & Clean Protein Scramble
- 1 package extra firm tofu
- 1 lemon
- salt & pepper
- nutritional yeast
- coconut oil
- chopped garlic
Optional Add Ins (vegan):
- bell peppers
- vegan cheese
Optional Add Ins:
- Canadian bacon/ham
- shredded cheese
- In a medium bowl, crumble tofu into small chunks. Squeeze juice of one lemon and add spices (except nutritional yeast, coconut oil and garlic.) All spices are added to taste and are not exact measurements. If you are not used to cumin and turmeric, don’t go overboard as you can always add more later. Massage spices into tofu and let sit.
- Lightly brown garlic in a medium saucepan. Add about 1 tbsp of coconut oil, meat (if using) and veggies into pan. Once the meat and veggies are cooked, add the tofu mixture. Sprinkle 1-2 tbsp of nutritional yeast and/or cheese into scramble and stir.
- Plate scramble and top with avocado or additional cheese if desired. Enjoy!
