Happy Sunday everybody!! Since I actually had time to make breakfast this morning, I decided to make my favorite healthy banana pancakes!!! Pancakes are probably my all-time favorite breakfast food (especially chocolate chip ones!), but sadly, they are not very healthy. Occasionally, yes I will go get a fat stack of chocolate chip pancakes from Ihop, but that is probably not a good idea for a few times a week, so I had to compromise. With this recipe, I still get my pancake craving filled and I can feel good that I had a healthy breakfast that is filled with protein and good-for-you carbs!
This recipe is one of the first healthy recipes I made for my Instagram account (@thehealthyishlife) and is one of the reasons I changed my diet and started to eat healthier! Although these pancakes are not vegan, they are gluten and dairy free and are made using only TWO INGREDIENTS!! Crazy right?! The original recipe is from a Blogilates video like five years ago, but over time I have found small ways to improve it, so be sure to try my modified recipe down below! 🙂
Gluten Free, Two Ingredient Banana Pancakes
- 1 large banana
- 2 eggs
- pinch of cinnamon (optional)
- honey/agave (optional)
- In a small bowl, mash banana until you reach a liquid-y consistently. Crack both eggs and stir until combined. You may also add cinnamon here if you’d like.
- On the stove, place a pancake griddle or small frying pan over medium low heat. If your pan is not non-stick, lightly grease it. Place small spoonfuls of batter on the pan and flip when they begin to brown. Top with more cinnamon and honey/agave if you’d like! It’s definitely not necessary as the banana makes the pancakes quite sweet, but it helps with presentation! Enjoy!
